Wednesday Homework: In your lab book, write the following questions and answers: 1) What are the two organisms in sourdough bread that give it its distinct flavor? 2) What is the scientific name of the bacteria in sourdough bread? 3) What type of acid do these bacteria produce, that gives sourdough its sour taste? 4) What is the liquid at the top of your mixture and why does it smell pungent? (“Fermented Science” video on slide #16 – Three Main Energy Reactions will help you with the answers if you can’t remember.)
